Ok, today I'm going to share a simple recipe...
That's it! The Korean food ------ KIMCHI!!!
It's a bit like ulam i think... hmm...
Everyone thought Kimchi's recipe must be complex one...
But definitely no! It's just as simple as ABC and 123... hoho...
Ok... Let's see...
What we need is :
` 1 large Chinese or Napa Cabbage [a.k.a. 'Wong Nga Pak' XD]
` Some Chinese radish
` a bunch of green onions
` 2 whole bulbs of garlics
` 2 thumb sizes of ginger [euw.. I don't like its smell actually...]
` 4 medium onions
` 1 yellow pear
` 1 Fuji Apple [the 'Fuji' labeling is not necessary actually, haha XD]
` 1 packet of Baba's Pure Chili Powder [err... chili powder i mean... XD]
` About 1/2 cup of Soy sauce [can also be replaced by fish sauce accordingly]
` About 1/3 cup of Sugar [can also be replaced by honey accordingly]
I hope I didn't miss up any ingredients above...XD
First, we need to wash the cabbage and cut into preferred sizes. Sink it in a salt solution [5 litre of water and about 150 g of salt] for 3 hours...
Remove the cabbage from the solution and rinse it with water... twice or thrice...
[just wanna remove the salt solution...]
Alright... put aside the cabbage for a while...
Next, focus on the radish and and green onions...
Cut into 1- inch lengths or other shape accordingly...
Next... set up your blender for the garlic, ginger and onions and following ingredients...
Yup... blend the garlic, ginger, onions, apple and pear [make sure the apple and pear are peeled, seeded and cut into chunks] and of course with soy sauce, sugar and Baba's Pure Chili Powder...
The chili powder, soy sauce and the sugar can be adjusted accordingly...
It's up to you! :)
Blend everything finely and pour into the container containing Chinese cabbage, radish and green onions...
We are almost done!
Leave the Kimchi (covered) overnight in a warm place (not the fridge...=,=) for the fermentation...
Reminder :
` Wear gloves when mixing the ingredients! It's to protect your hands form the spicy chili...
[Ya... I know... The hand is ungloved in the pic... That's my stubborn Mummy... =,=]
` It is better to put the Kimchi into an airtight container and refrigerate as the Kimchi gives out strong smell, which may affect the other food in the fridge...
The Kimchi will become more sour and the flavor will improve as the days go by... :)
It can be consumed just like that!
It's also delicious when eaten with hot-cooked rice, with noodles, or cook some meat with it! Yummy~ :)
